As much as I am looking forward to moving into our new house there are things that have me concerned. Am I going to really like my master bathroom? Will I want to change the layout? Will I be disappointed with the tile and paint I've chosen? There are so many decisions to make when building a house and then you have to factor in budget which honestly controls most of your decision making ability. The things I wanted, I can't quite afford, if I'd like the rest of the house. However there are many years ahead of me to make it what I want. We forget it's a process. We want things now. I know I'm guilty of it. If I want to change it I have to make the commitment to save up and then live through any remodeling.
What do you do when your son needs an allergy friendly birthday cake for
his upcoming second birthday? You scour Pinterest, allergy friendly
sites and then maybe make up something yourself. I have such a hard time
giving him certain foods. I try to buy things that are whole, meaning
nothing processed. The trouble is to make things allergy-friendly
they're mostly processed unless you make your own and at this point I
don't have the space to attempt such a feat - almond milk + is our
saving grace to keep this boy stocked with extra protein since dairy is
no longer an option. He is wheat, egg, and dairy free. These are his
main allergies. Others are chicken, soy, peanuts, and not
life-threatening, but uncomfortable on his digestive system. Perhaps my
husband will walk into a disaster filled kitchen this week.

Epic pizza fail.
So this no-grains thing completely hit the wall the other night. I gave in and ordered pizza. Pizza is- well was my favorite food. I haven't worked up to making a cauliflower crust yet which apparently is the latest thing in the let's make up for no grains food. We had no groceries - poor planning on my part. So I just melted. It had been a long day of being out and about and I'd had a granola bar also probably contributing to my grumpiness.
If I eat another egg for breakfast I just might throw-up or become an egg. I'm also concerned about the Paleo diet and cardiovascular disease which I'm still researching if there is a link especially with my former pregnancy induced hypertension that still lingers due to my pre-eclampsia. Also, before pregnancy I had high triglycerides and heart disease runs in my family - all reasons in my book to RESEARCH! I can't just take a bloggers word for it.
According to the "inventor" of the Paleo diet:
In my opinion you're essentially saying goodbye to all the junk we're eating instead of high protein, fruits and vegetable diet we SHOULD be doing. Also I've found that by saying "I can't eat that because of my sensitivity to grains..." gives ME a reason to avoid these things.

I feel like a lot of the Paleo lifestyle focuses on unhealthy amount of red meats, high in saturated fats I need to have my blood work done, share that and then go from there. I think it's better to go slowly into this type of "lifestyle" rather than just jump in which is what I did and look where it ended up - epic pizza fail. So onto new recipes and coconut flour ( which is something new to try and I'm excited since I love coconut!)

No grains is my new game.
I often struggle with what to post. I feel like there are times when I don't want to say certain things but then I do. Honestly I really don't know what this blog is about. Just a place to share my thoughts I suppose.
Last week the monthly started up again after nearly two years of absence - hello pregnancy and breast feeding although in my case it was pumping. It honestly freaked me out. There are days when I am absolutely happy to want another child and other days I'm scared out of my mind. I had a fabulous first two trimesters of pregnancy. The last trimester I was very very ill and didn't really know it. Now I know it.
Over the last month I'd guess I have been gluten-free. It's honestly not been all that difficult, there are some great gluten-free products out there that taste "normal." I decided to go gluten-free due to the fact that I exhibit some of the symptoms of a gluten sensitivity with mostly bloating. I'm talking severe bloating here. As in my weight ranges anywhere from 190-196. Yep, that's right at least 6lbs of bloating. So I figured that diary may be the culprit but after about a month of no dairy, no real change happened. Nothing that "stuck" so to speak. Again sleep alludes me so I've been thinking and researching more things and now I'm thinking of just skipping grains all together. Yeah it's harder because I don't really care for too much vegetables and in fact I end up drinking most of my 2 1/2 recommended cups in a smoothie. Which could be too much sugar because I add lots of fruit and a little coconut milk. (Not too much because of the saturated fats).
